Eggs
Just a note
about our eggs and egg layers. The hens do not care for the cold weather at all. Except for two days, they pretty much have been in their coop since mid-December. The worse part is the constant freezing tempretures. We have yet to have access to electricity for heating or defrosting (we are 'on the list' but have been pushed back due to the weather related outages -- which is understandable.) But, because of this, their water freezes after some time. On an occasion, these illustrious hens will revolt by eating their own eggs. (!) We do our best to keep them in fresh water and are holding out for warmer days.
Despite this, they have kept on laying enough for us to get between 12 -1 8 eggs a day on average. We even have gotten a few GINORMOUS eggs (as best emphasized by the photo of the egg carton. Note the big egg doesn't fit and it's an extra large carton! Egg cleaning is appearantly an art and a science... we're still perfecting our technique and admiring fancy egg washers available for purchase on line. It's either that, or re-build our laying boxes this summer...
